Avocado Cucumber Sandwich
Yummy, quick work day lunch or brunch with bread, sliced avocado, cucumber and spinach with a generous slathering of cheese spread.

- 4 ciabatta rolls, fresh substitute with sandwich bread, white or brown
- 1 medium size cucumber washed, peeled, thinly sliced
- 2 avocados peeled, pitted and sliced
- 1 cup baby spinach leaves
- 4-6 tbsp spinach artichoke dip (store bought) substitute with any cheese spread
- salt to taste
- pepper to taste
- 1 tsp fresh lemon juice
Take one ciabatta roll and spread the dip generously on both sides.
Add a layer of sliced cucumbers and sprinkle with salt and pepper.
Add a layer of sliced avocados, sprinkle with salt and pepper and squeeze a few drops of lemon juice.
Spread a few spinach leaves on top of the avocados.
Place the other half of the roll on top of the spinach leaves and press down gently.
Heat the electric sandwich maker (or a panini grill if you have one).Place two sandwiches in it.Add a smear of butter on top of the sandwich and press down hard till it closes.Toast till the roll is golden brown on top and crunchy on the sides. Serve hot with a side of chips and juice for a quick workday lunch.
