Avocado Cucumber Sandwich

Yummy, quick work day lunch or brunch with bread, sliced avocado, cucumber and spinach with a generous slathering of cheese spread.

Ingredients

  • 4 ciabatta rolls, fresh substitute with sandwich bread, white or brown
  • 1 medium size cucumber washed, peeled, thinly sliced
  • 2 avocados peeled, pitted and sliced
  • 1 cup baby spinach leaves
  • 4-6 tbsp spinach artichoke dip (store bought) substitute with any cheese spread
  • salt to taste
  • pepper to taste
  • 1 tsp fresh lemon juice

Instructions

  • Take one ciabatta roll and spread the dip generously on both sides.
  • Add a layer of sliced cucumbers and sprinkle with salt and pepper.
  • Add a layer of sliced avocados, sprinkle with salt and pepper and squeeze a few drops of lemon juice.
  • Spread a few spinach leaves on top of the avocados.
  • Place the other half of the roll on top of the spinach leaves and press down gently.
  • Heat the electric sandwich maker (or a panini grill if you have one).
    Place two sandwiches in it.
    Add a smear of butter on top of the sandwich and press down hard till it closes.
    Toast till the roll is golden brown on top and crunchy on the sides.
  • Serve hot with a side of chips and juice for a quick workday lunch.
