Corn & Tomato Soup

Easy and simple soup made with onions, sweet corn and tomatoes. Serve with a squeeze of lime, grated cheese or crushed tortilla chips on top and a side of warm crusty bread.

Equipment

  • Pressure cooker or Steamer
  • Slow cooker if desired

Ingredients

  • 1 medium onion peeled and chopped into large pieces
  • 2 medium tomatoes sliced in half
  • 2 cloves fresh garlic peeled and chopped in half
  • 1 cup sweet corn kernels
  • 1/2 cup sweet corn kernels to add later
  • 1 fresh green chili pepper serrano, jalapeno or thai; deseeded and cut in half
  • 5 sprigs fresh cilantro washed and chopped
  • 2 tbsp butter or
  • 1 tbsp oil

Spices

  • 1 tsp salt to taste
  • 1/2 tsp black pepper
  • 1/2 tsp red chilli powder paprika, chipotle or any other
  • 1/2 tsp jalapeno powder optional

Instructions

For the soup

  • Steam or pressure cook onions, tomatoes, garlic, chili pepper, and corn with 1/2 cup water.
    Allow to cool and blend.
    In a pan, heat the butter (or oil) and add the pureed mix.
    Add the spices and chopped fresh cilantro.
    Add 1/2 c corn kernels.
    Cover and simmer for 5-6 mins till heated through.
