Easy Fresh Peach Cobbler

This peach cobbler is overall quite easy to make and forgiving of haste. By that I mean that you can put the bake together rapidly and even if there are some miscalculations along the way it always turns out golden, soft and absolutely delicious. It is also a hit at parties as it looks complex and you can showcase large chunks of peaches under a spongy crust.

Ingredients

  • 5-6 fresh peaches washed, sliced
  • 1+1 cup sugar
  • 1 tbsp lemon juice
  • 1 cup all purpose flour
  • 1 cup milk
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter unsalted, melted
  • 1 tsp powdered cinnamon or cinnamon sugar to sprinkle

Instructions

Preparing the peaches:

  • Wash 5-6 peaches, the quantity of sliced peaches should be 4 cups.
    Cut the peaches (with the peel intact) into slices and discard the stone.
    Place the sliced peaches in a medium pan and add
    1 cup sugar
    1 tbsp lemon or lime juice
    Bring to a boil on medium heat, stirring from time to time.
    Turn off the heat when the mixture is nice and bubbly.

Preparing the batter:

  • While your peaches are gently simmering, prepare the batter.
    In a bowl, measure
    1 cup all purpose flour (maida)
    1 cup sugar
    1 tbsp baking powder
    1/4 tsp salt
    Mix the dry ingredients with a spatula.
    Add 1 cup milk and stir it in till the batter is moistened completely, no need to whip or whisk, just a few gentle rotations with a spatula will do the trick.

Preparing the pan:

  • Simultaneously, you can now preheat the oven to 375 deg.
    Take a 9 x 13 glass or metal baking dish.
    Add 1/2 cup melted butter.
    Pour the batter into the dish, do not stir (as it will spread out in the oven while baking).
    Pour the bubbling peaches into the pan on top of the batter.
  • Sprinkle some cinnamon or cinnamon sugar on top of the peaches (optional).
    Pop the pan, uncovered, into the preheated oven at 375 deg for 40 mins. or until the top crust is golden brown.
    Remove from oven, let stand for 10 mins and it is ready to serve.
    This cobbler can be served hot or cold and even with a scoop of vanilla ice cream on the side.
