Lemon Lassi

Lassis are light, cooling and full of good probiotic stuff. They are easy to whip up if you have some yogurt in the fridge. Lemon lassi is tangy and sweet and very very satisfying.

Equipment

Ingredients

  • 1 cup yogurt plain, Greek
  • 1/2 + 1/2 cup water
  • 4 tsp sugar
  • 2 tsp lemon zest
  • 1 tbsp lemon juice fresh

Instructions

  • Take 1/2 cup water in a pan and set it on low heat.
    Add 4 tsp sugar to it and let it dissolve, turn off the heat.
  • Choose a fresh lemon and zest the peel lightly to yield 2 tsp zest.
  • Squeeze 1 tbsp fresh lemon juice, set aside.

In a blender, add

  • 1 cup plain yogurt
    1/2 cup plain water
    1/2 cup water with sugar dissolved in it
    2 tsp lemon zest
    1 tbsp lemon juice
  • Blend everything till smooth and frothy
  • Pour into 2 glasses, sprinkle some zest and serve chilled.
