Ingredients

  • 1 cup sprouted lentils and beans
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1/2 cup peeled and diced cucumber
  • 1/4 cup chopped cilantro
  • 2 green chillies to taste
  • 1/4 tsp turmeric powder
  • 1/2 tsp chaat masala substitute with cumin and coriander powders
  • 1/2 tsp salt to taste
  • 1/2 cup crushed chips or bhujia for topping

Instructions

Making the salad

  • Heat 1 tbsp oil in a pan
    Add turmeric and chopped green chillies, onions and tomatoes and lightly sauté, you don’t want to lose the crunch.
    Add the sprouts, salt, and chaat masala (substitute with cumin-coriander-black salt) and cover.
    Let the sprouts steam and soften a bit, about 10 mins.
    Remove from heat, squeeze some lemon or lime juice, top with chopped cucumbers and some bhujia or crushed potato/tortilla chips.
    Serve as a snack or a side salad.
