Ingredients
1cupsprouted lentils and beans
1/2cupchopped onions
1/2cupchopped tomatoes
1/2cuppeeled and diced cucumber
1/4 cupchopped cilantro
2green chilliesto taste
1/4tspturmeric powder
1/2tspchaat masalasubstitute with cumin and coriander powders
1/2tspsaltto taste
1/2cupcrushed chips or bhujiafor topping
Instructions
Making the salad
Heat 1 tbsp oil in a panAdd turmeric and chopped green chillies, onions and tomatoes and lightly sauté, you don’t want to lose the crunch. Add the sprouts, salt, and chaat masala (substitute with cumin-coriander-black salt) and cover. Let the sprouts steam and soften a bit, about 10 mins. Remove from heat, squeeze some lemon or lime juice, top with chopped cucumbers and some bhujia or crushed potato/tortilla chips. Serve as a snack or a side salad.
