Related to broccoli, cabbage, Brussels sprouts, and kale, the versatile cauliflower has found new fame thanks to the keto diet. Word pairs we have never heard before are now common, such as cauliflower rice and cauliflower pizza. Although the aloo gobi (potatoes and cauliflower) is a very popular Indian dish, I have been inspired to try new ways of using this cruciferous vegetable.
I have started making these cauliflower florets cooked in pizza sauce as a side for grain bowls, which I have been working on for a few months now. This is a simple recipe that you can make ahead and pair with any grains and or add to your salads.
Step by Step
- 1 cup cauliflower florets, rinsed and set aside.
- In a pan, add 1 tsp olive oil and the florets.
- Add 1 tbsp store bought pizza sauce.
- Mix well, cover and cook on medium heat.
- In about 10-15 minutes the florets should be soft and deliciously pizza flavored.
- Serve with grain bowls, salads or in pita pockets.
