With a long summer break ahead, I want to jumpstart my days with smoothies now that I don’t have to be in class first thing in the morning. I started by buying a smoothie blender as the Little Birdies had taken our old ones with them. The star of this smoothie is the green apple, known as Granny Smith, in the US. They are often reserved for cooking and baking as they are tart and sweet and hold their shape well.
You can use any apples that you have on hand. The green ones are more tart and that’s the only reason I chose them. The avocado in the smoothie does not really add to the taste but definitely helps with the thickness, texture and nutrition. I added strawberries because I had some on hand but you can add a banana instead. I went with coconut water instead of a fruit juice to cut back on added sugars; plus coco water is so good for you with all the minerals and electrolytes.
The smoothie is lighter in taste and texture than the Tropical Green Smoothie but leaves you filling full. The taste is a combination of sweet and tart and is simply delicious.
Step by Step
- Peel and chop 1 green apple (substitute with any other variety of apple)
- Peel, deseed and chop 1 avocado
- Chop 6-8 strawberries
- 1 cup tightly packed baby spinach leaves
- Place all in a blender
- Add 1 cup coconut water
- Blend
- Pour in a cup and sip!
