This cilantro lime dressing is gorgeous to look at and tastes heavenly. Although the ingredients are commonly paired around the world, this particular sauce makes me want to make tacos and quesadillas morning, noon and night. This dressing is very similar to the fresh cilantro chutneys we make in India to dip our dosas or smear on bread for sandwiches.
Some folks call it a chutney, others a sauce and still others a dressing…they all taste darn good! I use this sauce as a dressing for grain, rice or salad bowls and especially in quesadillas and tacos.
Step by Step
- 1 bunch cilantro, washed and cleaned. Use leaves and stems.
- 2 cloves of garlic
- 2 tsp lime or lemon juice
- 1/4 cup plain yogurt
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp crushed red pepper
- 2 tsp olive oil
- Place all ingredients in a blender, except for the oil.
- Whisk to a smooth sauce
- Add the oil and mix with a spoon.
- Store in an airtight jar and refrigerate.
Some Tips
I did not have fresh green chillies so I used crushed red pepper flakes. If possible, use one jalapeno or serrano pepper, deseeded.
You can adjust the salt and pepper to taste. You can easily add more after you have blended and tasted the sauce.
This sauce will last 4-5 days in the fridge; make in small quantities so it can be used up.
