This magical fungus has its own council and association in the US and there are several rules and guidelines. I tend to stay on the safe side and buy mine at the grocery store. Sometimes farmers or growers will give me some new type of mushroom to try but I have not gone beyond risottos and sides or a dry mushroom curry as a filling for sandwiches.
This is a simple recipe made with white mushrooms that you can make ahead and pair with any grain bowl or add to your pasta.
Step by Step
- 8 oz white mushrooms, rinsed and cut into quarters.
- In a pan, add 1 tsp olive oil and the mushrooms.
- Brown the mushrooms on both sides.
- Add 2 tbsp store bought pesto sauce.
- Mix well, cover and cook on medium heat.
- In about 10 minutes the mushrooms should be soft and deliciously pesto flavored.
- Serve with grain bowls, salads or with pasta.
