What a trend this was in the early 2000s!! There were smoothie bars everywhere and you knew something had really caught on when high schoolers walked around with tall smoothie glasses. A smoothie is such a great way to get your vitamins and fiber and it really does taste delicious.
We jumped on the smoothie wagon when the girls were in their teens. One of them was vegan at the time, looking for a filling breakfast substitute for eggs, and smoothies fit the bill quite nicely. They tried all kinds of combinations with carrots, berries, greens, and other vegetables.
This particular smoothie has endured for a decade or longer with them now and recently Little Birdie #2 reminded me that I need to start my day right. She whipped up her fave green smoothie and it tasted even better because a) I didn’t have to nag her to drink it and b) it was made for me and served on a linen napkin on Valentine’s Day.
Step by Step
- 2 cups tightly packed spinach leaves
- 1 banana, chopped
- 1/2 cup mango chunks
- 1/2 cup pineapple juice
- Place all in a blender and whip till smooth.
- Pour in a glass and let the goodness refresh you!
Some Tips
You can use a combination of greens like spinach and kale. Even a few sprigs of cilantro or mint taste great.
You can use fresh fruits if available or frozen. Since we do not get tropical fruits year round, I buy some bags of frozen mango and pineapple chunks.
Some ingredients that go well in smoothies: chopped carrots, grated beetroot, cucumber, and fresh or frozen berries (strawberries, blackberries, blueberries, raspberries).
You can use orange, pineapple, apple or any other juice that you love.
You can experiment till you find a few different combinations that you love.
