We wait all summer for Palisade peaches in Colorado as they are definitely the best. Super juicy and sweet, they are perfect for eating…just make sure you have a napkin to wipe the juice running down to your elbows. The arrival of Palisade peaches also coincides with the reopening of schools and the footfall of autumn in the distance. Long, hot, and dry summer days followed by cool nights are what makes these Palisade beauties almost the best peaches in the world. Unfortunately, the history of the town of Palisade is not as sweet as the Uncompahgre Ute tribes of Native Americans were forcibly removed from their ancestral home in the Western Slope of Colorado in 1881, and the colonizers founded the town of Palisade.
Cobblers are overall easy to make and forgiving of haste. By that I mean that you can put the bake together rapidly and even if there are some miscalculations along the way they always turn out golden, soft and absolutely delicious. It is also a hit at parties as it looks complex and you can showcase large chunks of peaches under a spongy crust.
Step by Step
Preparing the peaches:
- Wash 5-6 peaches, the quantity of sliced peaches should be 4 cups.
- Cut the peaches into slices and discard the stone. I slice them with the peel as I prefer not to waste any part of these precious peaches and also find that the peels add to the texture of the cobbler.
- Place the sliced peaches in a medium pan and add
- 1 cup sugar (I used 1/2 cup brown sugar + 1/2 cup white sugar as I ran out of the brown)
- 1 tbsp lemon or lime juice
- Bring to a boil on medium heat, stirring from time to time. Turn off the heat when the mix is nice and bubbly.
Preparing the batter:
- While your peaches are gently simmering, prepare the batter.
- In a bowl, measure 1 cup all purpose flour (maida)
- Add 1 cup sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- Mix the dry ingredients with a spatula
- Add 1 cup milk and stir it in till the batter is moistened completely, no need to whip or whisk, just a few gentle rotations with a spatula will do the trick.
Preparing the pan:
- Take a 9 x 13 glass or metal baking dish.
- Preheat the oven to 375 deg.
- Add 1/2 cup melted butter. I chopped up the butter and melted it in the microwave for 40 secs.
- Pour the batter into the dish, do not stir (as it will spread out in the oven while baking).
- Pour the bubbling peaches into the pan on top of the batter.
- Sprinkle some cinnamon or cinnamon sugar on top of the peaches (optional).
- Pop the pan, uncovered, into the preheated oven at 375 deg for 40 mins. or until the top crust is golden brown.
- Remove from oven, let stand for 10 mins and it is ready to serve.
- This cobbler can be served hot or cold and even with a scoop of vanilla ice cream on the side.
