Strawberry Lassi

Continuing the lassi series with this ‘can’t get enough strawberries’ lassi! Lassis, made from yogurt, are an ubiquitous and welcome part of lunch all through summer in India, as it has almost magical cooling properties (ask any grandmother or aunty in India). Lassis in India tend to be thicker and the consistency lands somewhere between a smoothie and a fruit juice.

I make this lassi preferably with strawberry compote, because it does require some sweetener and the compote is easier to use. Of course, I make this lassi with fresh strawberries and sugar when I’m out of compote, which happens often, because I crave this cooling drink almost every morning. This lassi (either with compote or fresh strawberries) is creamy and I like to leave small bites of strawberry in it by avoiding over blending. I usually will make 2 servings either for myself over 2 days or just in case a friendly face stops by for a visit.

Step by Step

  1. In a blender add:
    • 1 cup plain yogurt
    • 1/2 cup strawberry compote OR
    • 1 cup hulled, chopped strawberries + 4 tsp sugar (see here for how to hull and chop strawberries)
    • 1 cup water
  2. Blend all together, pour into 2 glasses and serve chilled.
