Mango Avocado Smoothie

This summer has been extremely hot from day one and I find myself planning cooling drinks ahead of time (crazy what some idle time for the brain yields). Drinking smoothies or lassis in the morning tide me through the day and also keep me chill (even if it is all in my mind).

Since avocados are creamy and mild tasting, they are a great addition to smoothies. Paired with a mango, orange juice and chia seeds, this smoothie was absolutely delicious and filling.

The color of this smoothie is an absolute darling light pastel yellow. I soaked 1 tbsp chia seeds in 1/4 cup water about 30 mins before mixing in the smoothie, this is optional but it adds to the texture and of course bumps up the nutrition value of the drink.

I like smoothies that are a little thick and can be scooped with a spoon but If you like your smoothies runnier, add an additional 1/2 cup of juice or water.

Avocado Mango Smoothie

Ingredients

  • 1 avocado peeled, deseeded
  • 1 mango peeled, chopped
  • 1 cup juice orange, mango, pineapple, apple or a blend
  • 1 tbsp chia seeds
  • 1/2 cup water as needed

Instructions

  • Soak 1 tbsp chia seeds in 1/2 cup water or juice for 30 mins.
  • Cut the avocado in half, scoop out the flesh and discard the seed and peel.
  • Peel the mango and cut it into large chunks, discard the seed and peel.
  • Place the cut avocado and mango pieces in a blender.
  • Add 1 cup juice.
  • Blend all the ingredients together until smooth.
  • You can add an additional 1/2 cup of juice or water if you like your smoothie to be more runny than thick.
  • Pour into 2 cups and top with the soaked chia seeds.
  • Serve cold.
